Cinnamon Jumbles image

These are crisp on the outside and soft and cakey on the inside, thier like a super soft snickerdoddle. HINT:You can sub. one 6-oz container of plain or vanilla yogurt for the buttermilk, I do it all the time because I rarely have buttermilk on hand.

1/2 c shortening
1 c sugar
1 egg
3/4 c buttermilk
1 tsp vanilla extract
2 c flour
1/2 tsp baking soda
1/2 tsp salt
CINNAMON SUGAR
1/2 c sugar
1 tsp cinnamon

Steps:

  • 1. Preheat oven to 400.
  • 2. Cream shortening and sugar together, add egg mix well, add buttermilk and vanilla.
  • 3. Sift togehter flour, baking soda, and salt.
  • 4. Add dry ingredients to the wet ingredients in three additions until just combine.
  • 5. Chill dough 1-2 hours.
  • 6. Drop rounded tspns. of dough into cinnamon sugar mixture, place 2 inches apart on a lightly greased cookie sheet, bake until set but not brown, 8-10 minutes.
