1/2 chicken
2 qt chicken stock
2 large leek
4 clove garlic
1 c uncooked barley
1/3 c sliced prunes
To taste salt
3 Tbsp oil
1 Tbsp each of rosemary and thyme

Steps:

  • 1. I make my own stock boiling the chicken and adding an onion carrot celery some herbs.. but store bought work a fine. Just need 2 qts of stock
  • 2. Cook 1 cup of barley as directed on product
  • 3. Wash leeks well they hold dirt! Slice In to rounds 1/3 -1/2 inch thick.
  • 4. Heat oil toss in garlic rosemary and cut leeks. Cook stirring often until leeks are bright green and the white is semi translucent.
  • 5. Add 2qt of stock and cooked cut up chicken( small bite size) 2tsp of thyme simmer an hour
  • 6. Add barley simmer an hour.. stir occasionally
  • 7. Add sliced prunes and simmer 10 minutes. Done
