Cocktail Salad Dressing image

Punch up your next shrimp Caesar with this salad-friendly riff on classic cocktail sauce.

Yield Makes about 3/4 cup

Number Of Ingredients 6

1/4 cup ketchup
2 tablespoons fresh lemon juice
1 teaspoon Dijon mustard
Pinch sugar
1/4 cup extra-virgin olive oil
Kosher salt and freshly ground pepper

Steps:

  • In a medium bowl, whisk together ketchup, lemon juice, 2 teaspoons water, mustard, and sugar. Whisking constantly, add oil in a steady stream and whisk until dressing is thickened and smooth. Season with salt and pepper to taste. Refrigerate in an airtight container for up to 5 days.
