Coconut Confetti Rice image

This is something that I first tasted at TGIFriday's. I fell in love with it and then they stop selling. So I can to recreate it. It's a great side this for grilled chicken or fish.

Number Of Ingredients 9

1 c jasmine rice
1/2 c coconut milk, unsweetened
1/2 c water
1 tsp vanilla extract
1/2 c mango, diced
1/2 c sweet onion or shallots, carmelized
1/4 c green onion, tops only
1/4 c sweet red pepper, chopped
**NOTE** FOR A LITTLE EXTRA FLAVOR SPRINKLE WITH A LITTLE BIT OF CINNAMON & NUTMEG.

Steps:

  • 1. Combine water, milk, and vanilla in a saucepan and add rice.
  • 2. Bring to a boil, then cover and simmer until rice has absorbed liquid, about 15-20 minutes. This may depend on the brand of rice you buy, so double check the directions.
  • 3. Stir in coconut, mango, Vidalia onion, green onion, and red pepper.
