I've never been a big fan of coconut, but I decided to give this recipe a try anyway. I'm so glad I did! The coconut flavor was subtle and it paired perfectly with the shrimp.

Crispy on the outside and tender on the inside. The coconut adds a nice sweetness that pairs well with the shrimp. A definite keeper!
