Cookies with Pecans image

My family prefers these pecan cookies to any store-bought variety. Self-rising flour makes them a little different from most cookie recipes.

Yield about 3-1/2 dozen.

Number Of Ingredients 8

1/3 cup butter, softened
1/3 cup shortening
1/2 cup sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1-1/2 cups self-rising flour
1/2 cup chopped pecans

Steps:

  • In a large bowl, cream the butter, shortening and sugars until light and fluffy. Beat in egg and vanilla. Gradually add flour and mix well. Stir in pecans. , Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 9-11 minutes or until edges are lightly browned. Cool for 1-2 minutes before removing to wire racks.
