I made this soup with leftover corned beef from a St. Patrick's Day dinner, and it was delicious! The barley added a nice heartiness to the soup, and the vegetables were a great addition.

The soup was a bit too thick for my taste. I would have liked it to be a bit thinner.

The soup was too salty for my taste. I would recommend using less salt in the recipe.

I've made this soup a few times now, and it's always a crowd-pleaser. The barley adds a nice texture, and the vegetables add a pop of flavor. I like to serve it with a side of crusty bread for dipping.
