Cornflake S'mores Cookies image

1 cup unsalted butter, room temperature
1 1/4 cups granulated sugar
2/3 cup brown sugar, packed
1 egg
1/2 teaspoon vanilla
3 cups flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 1/2 teaspoons salt
3 cups crushed corn flakes
2/3 cup mini chocolate chip
1 1/4 cups mini marshmallows

Steps:

  • Preheat oven to 325 degrees.
  • Cream butter and sugars for 2-3 minutes.
  • Add in egg and vanilla, beat for 5 minutes.
  • On low speed, mix in flour, baking soda, baking powder and salt until just combined.
  • By hand, mix in crushed cornflakes until well combined.
  • Add mini chocolate chips and marshmallow and continue to mix by hand until combined.
  • Grease or line cookie sheets.
  • Roll into golf ball sized balls and, one at a time, place on sheet and smash flat (about 1/4 in thick).
  • Make sure cookies are at least 1 1/2 inches apart on cookie sheet.
  • Bake for 8-10 minutes.

These cookies were so easy to make and they tasted amazing! I loved the combination of chocolate, marshmallow, and cornflakes. I will definitely be making these again soon.

I'm not usually a fan of cornflake cookies, but these Smores ones were pretty good! The marshmallow filling was sweet and gooey, and the cornflakes added a nice crunch. I would definitely make these again.
