Country Style Chicken and Noodles image

It's simple, but so good.

Number Of Ingredients 11

1 pkg (8 oz.) egg noodles
1/2 c butter
1/3 c flour
3/4 c milk
2 c chicken stock
salt & pepper to taste
2 can(s) mushroom stems & pieces, drained
2 boneless, skinless chicken breasts, cut into bite-size pieces, or a rotisserie chicken, skin removed and pulled
1 Tbsp olive oil
1/4 c fresh, grated parmesan cheese
2 Tbsp fresh, chopped parsley

Steps:

  • 1. Cook noodles according to package directions.
  • 2. Meanwhile, in a deep skillet, heat olive oil and saute chicken until cooked. Remove from pan, set aside. (Skip this step if using pulled rotisserie chicken)
  • 3. Return pan to stove and heat butter in pan, blend in flour with a wire whisk until smooth. Add broth and milk, stirring constantly until thickened. Add salt & pepper.
  • 4. Add mushrooms, noodles and chicken to sauce, stir until well combined and warmed through.
  • 5. Plate and top with Parmesan cheese and fresh chopped parsley.

So easy to make and so delicious! I love that I can use all pantry staples to make this dish. It's a great weeknight meal.

The chicken was a little dry, but the noodles were cooked perfectly. The sauce was flavorful, but a little too salty for my taste. Overall, it was a good dish, but I would make a few adjustments next time.
