Creamy Lemon Rice image

Number Of Ingredients 8

2-1/2 cups chicken broth
2 ounces cream cheese, cubed
1/2 teaspoon grated lemon zest
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
1 cup uncooked long grain rice
1/4 cup minced fresh basil

Steps:

  • In a saucepan, combine first six ingredients; bring to a boil. Stir with a whisk to blend., Stir in rice; return to a boil. Reduce heat; simmer, covered, until liquid is absorbed and rice is tender, about 15 minutes. Stir in basil.
