Creole Rabbit (Rarebit) image

First off, there is no rabbit in this recipe. This is a take-off from the Welsh Rabbit with a New Orleans flavor. I recently moved my mother to a retirement home and this was in her recipe box. It says "For a Lenten main dish, omit the bacon and serve over fluffy rice".

I found the recipe to be a bit confusing. It wasn't clear how much of each ingredient to use.

This dish is a bit too rich for my taste, but it was still enjoyable.

I'm not a big fan of rabbit, but this dish was surprisingly good. The cheese and spices really helped to mask the gamy flavor.

This is a great recipe for a special occasion. It's easy to make, but it looks and tastes like something you'd get at a fancy restaurant.

I love the creamy texture of this dish. The cheese and rabbit blend together perfectly, and the spices add just the right amount of flavor.
