Creole Tilapia image

A great way to prepare any white fish fillets you may have on hand. A side of Mexican-style rice is a wonderful enhancement to the meal.

4 bell peppers, sliced into strips
4 Roma tomatoes, diced, or more to taste
1 large onion, sliced into strips
⅓ bunch fresh cilantro, chopped
1 jalapeno pepper, chopped
2 cloves garlic, minced
¼ cup olive oil
2 limes, juiced, divided
2 pounds tilapia fillets
1 pinch Creole seasoning, or to taste
½ cup shredded Mexican cheese blend

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Layer bell peppers, tomatoes, onion, cilantro, jalapeno pepper, and garlic in a baking dish. Drizzle olive oil over mixture; add juice from 1 lime and mix well. Arrange fish fillets over mixture and season with Creole seasoning. Sprinkle Mexican cheese blend over fish and add remaining lime juice. Cover dish with aluminum foil.
  • Bake in the preheated oven until fish flakes easily with a fork, about 40 minutes.
