Crockpot Ribs and Taters image

During the heat wave of July 2011 we got tired of grilling and bbq. The crockpot did get more than it's fair share of use. Using what I had on hand I made this dish and was very happily surprised at the great outcome! I grew up with Mom fixing neck bones & potatoes often, so I thought this might be a close call to a trip down memory lane yet updated.

I've made this recipe several times and it's always a hit. The ribs are fall-off-the-bone tender and the potatoes are perfectly cooked. I usually add a little bit of cayenne pepper to the rub for a little extra spice.

These ribs were a little dry, but the potatoes were amazing. I think I'll try this recipe again, but I'll cook the ribs for a shorter amount of time.
