My mother would make this when I was growing up but not in a crockpot. She has all her recipes in her head pretty much so I tried to duplicate it. I tweeked it a little, so don't tell her, and this is what I came up with. It was so darn good and all ready by the time I got home from work! Love my crockpot!

Steps:
- 1. Cut your steak into cubes and flatten them a little, place in the flour, salt and pepper in a ziplock bag. Shake and coat the steak. Brown in the olive oil on both sides.
- 2. In your crockpot layer your potatoes, carrots, beef and onions. In a small bowl combine your mushroom soup with the tomatoes then pour over the top.
- 3. Cover and cook on low for 6 to 7 hours or until the meat and veggies are tender. Sprinkle with parsley before serving. Enjoy.
- 4. Note: If you do not use a liner, remember to spray your crockpot with cooking spray to prevent any sticking and to make clean up easier.
