CUBAN BLACK BEAN PATTIES image

Yield 4 patties

Number Of Ingredients 10

2 c rinsed, drained canned black beans (15 oz cans), divided
1/2 tsp minced garlic
1/4 tsp cumin
1/8 tsp salt
1 large egg white
1/2 c. (2 oz) shredded Jack cheese (w/ jalapeno peppers if desired)
1/4 c chopped red onion
1/4 c cornmeal
cooking spray
1/4 c. sour cream

Steps:

  • Place 1 1/2 c beans, garlic, cumin, and 1/4 tsp salt in a bowl. Partially mash with a fork. Place 1/4 remaining beans and egg white in a food processor; process 30 seconds or until well combined. Add bean puree to mashed beans and stir. Add cheese and onion to bean mixture; stir. Divide bean mixture into 4 portions; shape into a 1/2 in patty. Dredge in cornmeal. Heat pan over med-high heat. Coat pan w/ cooking spray. Add patties and cook 3 minutes on each side or until browned. Top with sour cream. Serve with rice.
