Curried Meat Loaf image

Number Of Ingredients 11

1 large egg, beaten
1/3 cup milk
1/2 cup dry bread crumbs or rolled oats
1 garlic clove, minced
1 to 2 teaspoons curry powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup shredded carrots
1 medium onion, chopped
1-1/2 pounds lean ground beef

Steps:

  • Preheat oven to 350°. Combine first 10 ingredients. Add ground beef; mix well. Pat meat mixture into a 9x5-in. loaf pan. Bake until no pink remains, 60-75 minutes.

I'm not a huge fan of curry, but I thought I'd give this recipe a try. I'm glad I did! The curry powder was not overpowering at all. It just gave the meatloaf a subtle, savory flavor.

I had some leftover mashed potatoes, so I made a potato crust for the meatloaf instead of using breadcrumbs. It turned out really well!
