Curry Quinoa With Almonds and Cranberries image

Very simple, healthy and delicious meal. If you like quinoa, you'll love this. I've brought it to many potlucks; it always gets positive remarks. I sometimes leave out the red onion for those you don't like uncooked onions. Be creative with this recipe. You can add or subtract any veggies.

This was a bit of a disappointment. The flavors were just okay and the quinoa was a bit too mushy for my taste. I don't think I'll be making this again.

Overall, I thought this dish was pretty good. It was a bit bland for my taste, but I think that's because I didn't use enough curry powder. I'll definitely be making this again, but I'll adjust the spices to my liking.

I wasn't a fan of the texture of the quinoa. I think I would have preferred it if it was cooked a little longer.

This dish was a bit too spicy for me, but I still enjoyed it. I think next time I'll use less curry powder.
