Dads Sausage Almond Casserole image

Ever since I was a little girl, my dad would come up with recipes to feed us 6 kids. This is one of the more popular ones! We would all fight for seconds! I sometimes will change up the peppers and use multi-colored peppers.

4 1/2 c water
2 envelopes dehydrated chicken noodle soup mix
1 c uncle bens long grain rice
1 lb bulk sausage roll
1 1/2 c celery, chopped
1 medium onion, chopped
1/2 c green pepper
2/3 c sliced blanched almonds

Steps:

  • 1. In large saucepan, bring water and soup mix to a boil. Add rice and cover. Reduce heat to very gently boil for 25 minutes or until water is absorbed, remove from heat.
  • 2. While rice is cooking, fry sausage until browned. Remove meat from pan, reserving some fat for sauteing peppers and onions and celery until tender-crisp.
  • 3. Add rice, sausage and 1/2 cup of the almonds to vegetables reserving remainder of almonds for garnish. Mix well. Turn into a 2 quart baking dish. Sprinkle remaining almonds over top.
  • 4. Bake at 350 for 30 minutes or until heated through.

This casserole was just okay. The flavor was a bit bland and the texture was mushy. I wouldn't make it again.

I made this casserole for a potluck and it was a big hit! Everyone loved the combination of flavors and textures. I especially liked the crispy almonds on top.

This casserole was a hit with my family! The sausage and almonds gave it a unique and flavorful taste. I also liked that it was easy to make and didn't require a lot of ingredients. I will definitely be making this again.
