Deep Dish Apple Pie image

I can't make enough of these pies and my hubby gets very upset when I offer a piece to any one that comes over to visit. My neighbor did tell me that any pie first starts with a great crust and highly complimented me on mine....then wanted the recipe! You will really love this fella!!!!! "Enjoy"

15 med to large granny smith apples (i also used golden delicious and it turned out great!)
1 Tbsp lemon juice
1/3 c all purpose flour
1/2 c white sugar
1/2 c brown sugar
1 Tbsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
1/4 c heavy whipping cream
3 Tbsp real unsalted butter
glaze
1 c confectioners' sugar
2 Tbsp milk
1 pinch cinnamon
1/4 tsp strong instant coffee (i sprinkle instant coffee in a small cup and put in a few drops of water, mix well)

Steps:

  • 1. Preheat oven at 350 degrees
  • 2. Peel and slice all of your apples. If you don't have a apple peeler/slicer/corer you really need to get one. It speeds up time! I love it!
  • 3. Fill a large sauce pan (should be at least 2/3's full) with your sliced and peeled apples.
  • 4. Add all your other ingredients to the apples and cook on med to low heat until apples are "almost" cooked. About 15 to 20 min. Make sure to stir them often.
  • 5. while that is cooking make your favorite pie crust. (I will be posting mine here soon)
  • 6. Using a ladle, scoop your filling into the pie pan and add a few more pieces of butter on top before placing your top crust on.
  • 7. You should have a little extra pieces of pie dough to decorate with. Using a egg wash to attach to the crust. (Poke the top of your pie dough in about 5 places before baking) The egg wash will turn out golden brown on the crust after baking so touch the pretty pieces you decorated with and they stand out so pretty!
  • 8. Place your pie on a cookie sheet just in case it "leaks" Bake at 350 degrees for about 35 to 45 min (depending on your oven). After it's cooled you can glaze it. Make sure to use a soft pastry glaze brush. :)
  • 9. You can also make up some turnovers and mini pies using my crust and filling! They freeze up great and ready whenever you want a good dessert and don't want to go through all the fuss. Take a day to make up a bunch!

This deep-dish apple pie was a good starting point, but it needs some tweaking. The crust was a bit too dry and the filling was a bit too tart. I would recommend adding some sugar to the filling and using a different type of crust.
