Steps:
- Heat peanut oil in a deep fryer to 300 degrees. Slice fillets into long strips 3/4 inch by 1-1/2 inch cross section. Rinse and pat dry. Mix dry ingredients in a mixing bowl, add oil and chop or rub until the mixture is mealy. Add beer and enough water to a consistancy of watery pancake mix. Place a two section strip of towel paper near the fryer and dust with seasoned flour. Roll strips on the floured towel paper and put them into the batter five or six at a time. Using tongs ease the strip into the fryer and fry until golden. about four or five minutes. Lift out the fryer basket and drain. Then tumble fillets onto a platter covered with paper towels.
