Steps:
- 1. Heat oven to 400 degrees. Spray muffin cups (2 3/4" diameter) of muffin pan with butter flavored vegetable spray or grease with shortening, lightly, or of course you can use paper cups that go in the muffin tins.
- 2. Beat egg, stir in milk and oil. In a separate bowl, mix the dry ingredients, and make a well in the center.
- 3. Pour the wet ingredients into the dry ingredients, and stir well just until moistened. Batter should be lumpy.
- 4. Fill muffin cups 2/3 full. Bake for 20-25 minutes or until golden brown. Immediately remove from pan to wire rack. Serve hot or warm, with butter, preserves, jelly or honey.
