I found this years ago in a heart-healthy cookbook right after my father-in-law had a heart attack. It has been a staple in our house ever since!

Steps:
- 1. Trim all visible fat from chops
- 2. In a pie plate mix mustard & lemon juice. Place the bread crumbs in 2nd pie plate (for easier clean-up line the pie plate w/wax paper 1st!)
- 3. Coat each chop first in the mustard/lemon juice mixture & then coat with the bread crumbs.
- 4. Place the breaded pork chops on a baking sheet (I line the sheet w/aluminum foil -- again for easier clean-up!) Bake at 350 for 30 minutes, turning them about 1/2 way thru the cooking time.
