Steps:
- Melt chocolate in top of double boiler over barely simmering water, stirring until smooth. Cool slightly. Cream butter and sugar in medium bowl. Add egg and beat util light and fluffy. Stir in chocolate, buttermilk and vanilla. Sift flour, soda and salt into chocolate mixture and stir to blend. Mix in chocolate chips. Refrigerate until batter is stiff, about 1 hour. Preheat oven to 400 degrees F. Drop batter by generous teaspoons onto ungreased cookie sheets spacing 2 inches apart. Bake until cookies are firm around edges, about 10 minutes. While still warm, make indentation in center of each cookie with fingertips. Fill with jam. Transfer to rack and cool. (Can be prepared 1 day ahead. Store airtight.)
