Drunken Stuffed Sweet Potatoes image

This should be a dessert. It is so good! The crunchiness of walnuts and the fruity taste of raisins complement this traditional holiday dish. We use Venezuelan rum.

I'm not a big fan of sweet potatoes, but I really enjoyed these. The filling was especially good.

I thought the drunken part was a gimmick, but it actually added a really nice flavor to the dish.

I followed the recipe exactly and the sweet potatoes were still undercooked. I had to put them back in the oven for an additional 30 minutes.
