Time 4h30m

Yield 10-12 serving(s)

Number Of Ingredients 13

4 cups cooked pinto beans
4 cups cooked great northern beans
1 1/2 quarts hot water
2 tablespoons sysco chicken base
4 chicken breasts, cooked & diced
1 (4 ounce) can diced pimentos, with juice
1 1/2 teaspoons ground cumin
2 teaspoons chili powder
1 (4 1/2 ounce) can diced green chilies, with juice
1 white onion, peeled and diced
1 teaspoon celery seed
1 teaspoon ground thyme
1/2 teaspoon salt or 1/2 teaspoon salt substitute

Steps:

  • Put all ingredients in a dutch oven with lid or roaster with lid.
  • Put in the oven on the middle rack.
  • Oven 300*.
  • Cook 3 to 4 hours. Check once or twice to see if there is enough liquid. If it is getting a little too dry, add 1 cup water at a time and stir. Taste. You might want to add a little more salt.
  • Note: If you want hot chili add seeded diced jalapeno peppers, two will do.

I'm a vegetarian so I made this chili without the chicken. It was still delicious! I used extra beans and vegetables to make up for the lack of chicken.

I'm not a big fan of corn in my chili, but I decided to give this recipe a try anyway. I'm so glad I did! The corn added a nice sweetness to the chili and it really balanced out the flavors.

I love the fact that this chili is made with white beans instead of kidney beans. I find that white beans have a more delicate flavor and they don't overpower the other ingredients in the chili.

This chili was a little too spicy for me, but my husband loved it. He said it was the best chili he's ever had. I will definitely be making this again, but I will use less cayenne pepper next time.
