DUTCH PUFFED APPLE PANCAKE image

Yield 4 Pancakes

Number Of Ingredients 14

¼ cup (½ stick) unsalted butter
1 large Granny Smith apple, peeled, seeded, thinly sliced
½ cup coarsely chopped walnuts
4 large eggs
1 cup whole milk
2/3 cup all purpose flour
2 Tbsp sugar
1 tsp vanilla extract
¼ tsp ground cinnamon
1/8 tsp salt
½ cup dried cranberries
Nonstick vegetable oil spray
3 Tbsp (packed) golden brown sugar
Warm maple syrup

Steps:

  • Preheat oven to 425°F. Melt butter in 9-inch glass pie in oven. Arrange apple slices, then walnuts over butter. Bake until apples begin to soften and walnuts are lightly toasted, about 5 minutes. Meanwhile, using electric mixer, beat eggs, milk, flour, sugar, vanilla, cinnamon, and salt in large bowl to blend. Stir in cranberries. Remove pie dish from oven. Lightly spray inside edges of dish with nonstick spray. Pour batter into dish. Sprinkle brown sugar over batter. Bake until center is set and edges are puffed and slightly browned, about 25 minutes. Serve immediately with warm maple syrup.
