This sandwich is a great way to get your kids to eat their vegetables. My kids love the crispy eggplant and the tangy aioli sauce. I usually serve it with a side of fruit or salad.

I love this sandwich! It's so easy to make and it's always delicious. I usually add some avocado and sprouts to mine for extra flavor and nutrition.

This sandwich is a bit too rich for my taste. The eggplant is fried and the aioli sauce is very heavy. I think it would be better with grilled eggplant and a lighter sauce.

I'm not sure what went wrong, but my sandwich didn't turn out very well. The eggplant was too soft and the sandwich was overall very bland. I think I might have used the wrong type of eggplant.

This sandwich is a great way to use up leftover eggplant. I had some roasted eggplant in the fridge and this recipe was the perfect way to use it up. The sandwich was delicious and I will definitely be making it again.

I love the idea of using eggplant in a sandwich, but I think this recipe needs a few tweaks. I would use less oil when cooking the eggplant and I would add some herbs or spices to the aioli sauce for more flavor.

This sandwich was a bit too messy for my taste. The eggplant slices were too thick and the sandwich was difficult to eat without getting everything all over my hands.

This sandwich was just okay. The eggplant was a bit too smoky for my taste and the tomatoes were not very flavorful. I think I would have enjoyed it more if I had used a different type of bread.
