Apple Cider Bundt Cake image

I normally bake 'from scratch' cakes. But when I see cake mixes on sale... well you never know when you might need a quick dessert, right? Cake mixes are quite easy to doll up so they turn out tasting and looking special. This one reminds me of those yummy apple cider cinnamon donuts that are so delicious during the autumn...

1 box yellow or spice cake mix
1 c apple cider
1/2 c vegetable oil
3 large fresh eggs
1 tsp vanilla extract
1 medium fresh apple, peeled and diced
2 Tbsp white granulated sugar
1/2 tsp ground cinnamon
1/4 c butter, melted
1/3 c granulated sugar
2 tsp ground cinnamon

Steps:

  • 1. Preheat oven to 350°. Spray a bundt pan with a 'flour-added" baking spray.
  • 2. Toss the peeled, diced apple with the 2 TBS sugar and 1/2 tsp cinnamon and set aside.
  • 3. Blend the cake mix, cider, oil, eggs and vanilla in a mixing bowl for 30 seconds to blend. Increase mixer speed to medium and beat for 3 minutes, scraping down bowl several times.
  • 4. Pour half the batter into the prepared bundt pan. sprinkle the sugared apples over the batter. Pour over the remaining batter, gently turning the pan to evenly distribute the layer over the apples, Bake at 350° for 40-45 minutes, or until a toothpick inserted into the cake comes out clean.
  • 5. Remove the cake from the oven and cool on a rack for 20 minutes. Meanwhile melt the butter. Blend together the sugar and cinnamon. Invert the cake onto a serving plate. Bush the melted butter all over the warm cake. Sprinkle the top and sides of the cake with the cinnamon sugar. Cool completely before serving.
