EAST - WEST BREAKFAST image

This recipe is awesome. It goes well with hot tea or coffee, and a glass of freshly squeezed orange juice.

1 medium onion chopped
1 medium celery stalk, chopped
1/3 c chopped bell pepper
1/2 c water
4 large potatoes, bioled and peeled
1 c cooked rice
1 tsp ground cumin
1 Tbsp lite soy sauce

Steps:

  • 1. In a large nonstick skillet saute the onion, celery, and green peppers in 1/4 cup water.
  • 2. Add the potatoes and the remaining 1/4 cup water
  • 3. Cook, stirring gently until the vegetables are tender, About 5 minutes.
  • 4. Stir in the rice, cumin, and soy sauce.
  • 5. Cook, stirring until the bottom browns lightly about 2 minutes.
