Easy Cheesy Mexican Casserole image

This goes together quickly and then bakes for about an hour. This recipe can be taylored to your own tastes quite simply. You can vary the flavors by using different chili powders, beans, cheese blends or Dorito flavors. It's easy to control the heat level by which Ro-tel you use. If you don't like it hot replace the jalapenos with mild green chilies.

I'm not a big fan of Mexican food, but I thought this casserole was pretty good. It was cheesy and flavorful, and the chicken was cooked perfectly.

This casserole was a bit too cheesy for my taste. I would recommend using less cheese or using a different type of cheese, such as mozzarella.

This is a great recipe for a quick and easy weeknight meal. I love that I can just throw all the ingredients in a casserole dish and bake it. It's also a great way to use up leftover chicken or ground beef.

I've made this casserole several times now and it's always a crowd-pleaser. It's cheesy, flavorful, and easy to make. I usually add some extra vegetables to the mix, like chopped bell peppers or zucchini.
