Easy Mexican Chorizo image

Numerous times I have substituted other sausage for Chorizo when I didn't have it or could not find it at the market. I was told that it is not hard to make it so I read a bunch of recipes and put together this recipe. This recipe uses easy to find ingredients that I had on hand. It is very easy to make. Number Of Ingredients 6

2 lb boneless pork
2 tsp salt
2 to 4 Tbsp chili powder
3 clove garlic, smashed and minced
4 tsp white vinegar, (i used coconut vinegar)
2 tsp oregano

Steps:

  • 1. Add the pork to a food processor or grinder and give it a coarse grind.
  • 2. Add all the rest of the ingredients and process to mix well. Put sausage blend into a refrigerator container and allow it to refrigerate overnight, at least 6 hours.
  • 3. Fry the sausage for about 30 minutes. Any of the sausage that is not going to be used right away should be frozen in small portions until you need it.
