Easy Pineapple Bake image

We first had this at a special Easter dinner served for our family at the Ronald McDonald House in Philadelphia. It was a side dish served with ham, but could also be served as a dessert. I wish I could give credit to the sweet lady who shared the recipe with me.

¾ cup white sugar
½ cup butter, softened
4 eggs
5 slices day-old bread, cut into cubes
1 (20 ounce) can crushed pineapple, drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat sugar and butter together in a bowl using an electric mixer until smooth and creamy. Add eggs and beat until smooth. Stir bread and pineapple into creamed butter mixture; pour into a 1-quart baking dish.
  • Bake in the preheated oven until lightly browned and eggs are set, 45 to 50 minutes.
