Easy Raisin Bran Muffins image

Hearty, healthy, YUMMY muffins! My husband's Gram gave me this recipe to try and I loved it - thought that I would share it with everyone else. :)

Yield 12 Muffins

Number Of Ingredients 14

1 1/2 cups crushed Raisin Bran cereal
1 cup buttermilk
1/3 cup oil
1 egg
1 cup flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon cinnamon
2/3 cup packed brown sugar
1/2 cup raisins
1 cup chopped apple
nuts (optional)

Steps:

  • Heat oven to 400.
  • Mix all ingredients.
  • Fill 12 greased muffin cups with mixture.
  • Bake for about 17 minutes.
