I was a bit skeptical about making Spanish rice in a skillet, but I'm so glad I tried it! The rice cooked evenly and had a nice, toasty flavor. I will definitely be making this again.

I love that this recipe is lighter than traditional Spanish rice dishes. It's still full of flavor, but it's not as heavy or oily. I also appreciate that it's made with simple, everyday ingredients.
