EASY TROPICAL WALDORF SALAD image

Number Of Ingredients 12

6 Firm Red Apples
Juice of 1 fresh lemon
Juice of 1 fresh lime
5 stalks of celery
One small jar 4.5 oz of macadamia nuts, whole or pieces
1 head lettuce, sliced one-two inches thick
1 Cup Miracle whip salad dressing to taste
1 lb. Chopped cooked chicken breast
5 Tablespoons maraschino cherries
1/2 Cup coconut
1/2 Cup raisins
1 tsp. cinnamon

Steps:

  • Add cooked and cooled chicken to large bowl. Add cinnamon and turn to lightly coat chicken. Chop apples and add to bowl and mix. Sprinkle with freshly squeezed juice of lemon and lime and mix. Add sliced celery, macademia nuts, coconut and raisins and mix. Toss together with miracle whip. Cut lettuce into large round or half slices and lay flat onto plate. Scoop salad with an ice cream scoop and pile high onto large salad or dinner plates. Garnish chicken, lettuce and plate with maraschino cherries.
