THIS IS SOOOOO GOOD AND REALLY EASY TO MAKE..I HAVE MADE THIS FOR FAMILY PARTIES AND EVERYONE LOVES IT.

1 box 1 smallbox(3.4ounces) french vanilla instant pudding mix
1 c milk
1 carton frozen whipped dairy topping thawed
1/2 box (7.5 ounces) grahm crackers
1 c prepared chocolate frosting (i use canned frosting)

Steps:

  • 1. IN A MEDIUM BOWL, MIX TOGETHER THE MILK AND PUDDING MIX. FOLD IN WHIPPED TOPPING, PLACE A SINGLE LAYER OF GRAHM CRACKERS IN THE BOTTOM OF A 8 X 8 GLASS OR CERAMIC DISH. SPREAD ABOUT 1 CUP OF THE PUDDING MIX OVER THE CRACKERS.TOP WITH ANOTHER LAYER OF CRACKERS AND THEN WITH THE PUDDING MIX. CONTINUE UNTIL ALL OF THE PUDDING MIX IS USED ABOUT 4 LAYERS TOP WITH A FINAL LAYER OF CRACKERS.. SPREAD THE CHOCOLATE FROSTING OVER THE TOP LAYER OF CRACKERS, SEALING TO THE EDGE OF THE DISH. ( I REFRIGERATE THE PUDDING/ CRACKER DISH AND LET THE PUDDING SET UP BEFORE I SPREAD THE FROSTING ) AFTER FROSTING COVER WITH PLASTIC WRAP AND REFRIGERATE FOR AT LEAST 4 HOURS OR UP TO 24 HOURS..

Just wow! These éclairs are insanely delicious. I followed the recipe to a T, and they turned out perfectly. The only thing I would change is to add a bit more chocolate ganache to the top. Other than that, these are the best éclairs I've ever had.
