Time 15m

Number Of Ingredients 8

4 c all purpose flour ( you can use self-rising flour just leave off baking soda and baking powder
1 tsp baking soda
1 Tbsp baking powder
1/4 tsp salt
4 Tbsp sugar
4 eggs, separated (room temp)
3 c milk
1/3 c oil

Steps:

  • 1. Put all dry ingredients in a large mixing bowl
  • 2. separate eggs (do not put whites in plastic bowl use glass or metal)
  • 3. beat whites until soft peaks
  • 4. in large mixing bowl add oil and egg yolks mix well
  • 5. Start by adding 1/2 cup flour to egg/oil mixture mix until blended, add 1/2 cup milk and mix, add 1/2 cup flour and mix, continue until all flour and milk or used, ending with milk.
  • 6. Now you want to fold the egg whites into the batter, fold very lightly its is ok if you still have a few small lumps of whites
  • 7. I start my waffle iron to heating when I start to make my batter.
  • 8. You can keep this batter for 2 days after mixing, in a sealed bowl in the refrigerator. just fold gently until well mixed. I make mine up and put them in the freezer, then I can just put them in toaster or oven. Enjoy and please let me know how you like them

I'm a huge fan of Edna's waffles. They're the perfect combination of crispy and fluffy. I always make a double batch so I can freeze some for later.

These waffles were a bit bland. I think I should have added more sugar or vanilla extract.

These waffles were a bit too dense for my taste. I think I might have overmixed the batter.
