Number Of Ingredients 8

3/4 c splenda® no calorie sweetener, granulated
1 Tbsp arrowroot or cornstarch
1 1/2 tsp fresh ground nutmeg
7 egg yolks
4 c 2 % milk
2 c fat-free half n half
2 Tbsp vanilla extract
1 tsp rum extract

Steps:

  • 1. Mix together first 3 ingredients in a large heavy saucepan. Set aside. Whisk egg yolks. Add to SPLENDA Granulated Sweetener mixture whisking until blended. Gradually whisk in milk.
  • 2. Cook over low heat, whisking constantly until the temperature reaches 175 degrees approximately; after about 8 minutes I turned up the heat some to get it to the temp. I needed. (12 to 15 minutes). Remove from heat and whisk in half and half; cool.

I followed the recipe exactly, but my eggnog turned out lumpy. I'm not sure what I did wrong.

This eggnog was a bit too rich for my taste, but it was still good.

I'm not a big fan of eggnog, but this recipe changed my mind. It's so smooth and flavorful. I could definitely see myself drinking this on a cold winter night.

I've tried many eggnog recipes over the years, but this one is by far the best. It's so easy to make and always turns out perfect.
