Enchiladas image

A favorite from a former co-worker, Heidi.

Number Of Ingredients 15

1-2 lb hamburger
1-2 lb cheese, shredded cheddar and mozzerella
1 pkg enchilada seasoning dry mix
1 can(s) 28 ounce tomato sauce
1 1/2 c water
1 green pepper, chopped as desired
1 onion, chopped as desired
1 can(s) diced tomatoes as desired
1 pkg tortillas, flour (package of 10) large diameter
GARNISH
shredded lettuce
diced, fresh tomatoes
sour cream
guacamole
ripe olives, sliced

Steps:

  • 1. Brown hamburger, chopped onion, peppers if using. Drain
  • 2. Mix in enchilada dry mix, tomato sauce, water stir well and bring to a boil. Reduce heat and simmer 5 minutes. Simmer until veggies are tender ( if you add them to the sauce).
  • 3. Pour half of sauce into 9x13 baking dish and sprinkle half of the cheese on top of the sauce.
  • 4. Spoon meat sauce on tortilla, roll up and place in pan on top of sauce and cheese. Repeat with all tortilla's until all used.
  • 5. Pour remaining sauce and sprinkle cheese on top. Bake at 350 degrees for 20 minutes or until bubbly. Serve with garnishes as desired.
