I'm not a big fan of escarole, but I really enjoyed this soup. The escarole was cooked perfectly and it didn't have a bitter flavor.

I made this soup in my slow cooker, and it turned out great. I just threw all the ingredients in the slow cooker and let it cook on low for 8 hours. The soup was so flavorful and the escarole was perfectly tender.

I've made this soup several times now, and it's always a hit. It's so easy to make, and it's always delicious. I love the addition of escarole, which gives the soup a slightly bitter flavor that balances out the sweetness of the beans.
