Fall Harvest Bean Salad image

Found this on a can of kidney beans. Thought it would be a change from just bean salads that were usually fixed in the summer.

2 tablespoons red wine vinegar
1 tablespoon extra virgin olive oil
2 cups dark red kidney beans, rinsed and drained
3 tablespoons walnut pieces, toasted
1 tablespoon chopped cilantro
1/4 cup chopped apple

Steps:

  • Combine in a bowl and season to taste with salt & pepper. Cooking time is actually marinating time.
