Fingerling Potato Chips image

1 pound medium fingerling potatoes
1 tablespoon paprika
1 tablespoon salt
2 tablespoons coarse black pepper
2 tablespoons freshly chopped cilantro leaves
2 cloves garlic, minced
Vegetable oil, for frying

Steps:

  • Preheat oil to 350 degrees F.
  • Thinly slice the potatoes and place in a bowl.
  • In a large bowl, combine the paprika, salt, pepper, cilantro, and garlic, and set aside.
  • Add the potatoes to the hot oil. Fry in batches until golden brown and crispy, about 2 to 4 minutes.
  • Remove the chips from the oil, drain on paper towels and toss in the bowl with the seasoning.
