Time 20m

Steps:

  • Beat 2 eggs and 1/4 cup water in a shallow dish. Put 1/2 cup flour in another dish. Mix 3/4 cup breadcrumbs, 2 tablespoons chopped parsley, and salt and pepper in another dish. Cut 1 zucchini into sticks. Dredge in the flour, then in the eggs and breadcrumbs. Repeat with 12 bocconcini. Heat about 1/2 cup olive oil in a large skillet over medium-high heat. Fry the zucchini and mozzarella in batches, turning once, until golden, 2 to 3 minutes. Season with salt. Serve with spicy marinara sauce and lemon wedges.

These zucchini and mozzarella fritters were delicious! The zucchini was crispy on the outside and tender on the inside, and the mozzarella was melted and gooey. The lemon-herb dipping sauce was also very good. I will definitely be making these again.

I thought these were just okay. The zucchini fritters were a bit bland and the mozzarella didn't melt very well. I don't think I'll be making these again.

I love this recipe! The zucchini fritters are crispy on the outside and tender on the inside. The mozzarella cheese is gooey and melted perfectly. I always serve these with a side of marinara sauce and they're always a hit.

Good, but not great. The zucchini fritters were a bit too greasy for my taste. I think I'll try baking them next time instead of frying them.

I made these for a party and they were a huge hit! Everyone loved them. I used a little less salt than the recipe called for, and they were still plenty flavorful. I also added a bit of garlic powder to the batter, which gave them a nice extra kick.

Meh. The zucchini fritters were bland and the mozzarella was rubbery. I don't think I'll be making this dish again.
