Fruited Chicken Spread image

I got this recipe from a former neighbor about 12 years ago. She and her family haved moved a few miles away, into town, but I wish they were still in the neighborhood. She actually got my DH to dress as the Easter Bunny for a couple of years!!! I have pics to prove it. Anyway, back to the recipe. It is delicious and refreshing, especially in the warm weather we are beginning to have in NC. Again, guessing on the number of servings. Cook time is chill time, if you can wait for it to chill. I never do. ENJOY!!

Number Of Ingredients 6

2 cups finely chopped cooked chicken
1 cup chopped dates
1 cup chopped celery
1 cup pineapple chunk
2/3 cup mayonnaise
1/2-1 cup slivered almonds, toasted

Steps:

  • Mix all ingredients except almonds.
  • Chill for 1-2 hours.
  • Sprinkle with almonds.
  • Serve with crackers on lettuce.
