Garden relish image

This is a Samhain tradition in my family. For others it is simply the last harvest all set up on one tasty jar.

Number Of Ingredients 9

3 c each of sliced carrots,cooked - green tomatoes, cut in chunks - celery cut in chunks - pearl onions peeled and cooked or from jar
3 c each cut and cooked, green beans - lima beans - cauliflower chunked
3 c each cut and cookedcabbage - cucumber,thick slices, some peel on
2 red bell peppers , large chunks
3 1/2 c vinegar
1 Tbsp garlic powder or diced fresh
1 tsp oregano
1/2 tsp mustard seed
2 c granulated sugar

Steps:

  • 1. Cook or steam each vegetable separate al dente.
  • 2. Then combine all vegetables in a large bowl and fill 8 quart jars -leaving 1 inch head-space.
  • 3. Combine remaining ingredients in a saucepan and bring to a boil boil 2 minutes.
  • 4. Pour over vegetables in jars- wipe rim of jar and seal.
  • 5. This recipe doesn't call for it but I always boiling water bath for 15 minutes.
