Garlic Mashed Cauliflower image

I order cauliflower mash every time we're at our favorite restaurant. Lucky us; one night, I figured out how to make it at home. It was so easy! -Jean Keiser, West Chester, Pennsylvania

Number Of Ingredients 7

5 cups fresh cauliflowerets
1 garlic clove, thinly sliced
3 tablespoons fat-free milk
3 tablespoons reduced-fat mayonnaise
1/2 teaspoon salt
1/8 teaspoon white pepper
Cracked black pepper and minced fresh chives, optional

Steps:

  • Place 1 in. of water in a large saucepan; add cauliflower and garlic. Bring to a boil. Reduce heat; simmer, covered, until tender, 10-15 minutes, stirring occasionally. Drain cauliflower and garlic; return to pan., Mash cauliflower mixture to desired consistency. Stir in milk, mayonnaise, salt and white pepper. If desired, sprinkle with cracked pepper and chives.

This was a great recipe! I was looking for a healthy alternative to mashed potatoes and this fit the bill perfectly. The cauliflower was creamy and flavorful, and the garlic added a nice touch. I will definitely be making this again.

I've made this recipe several times now and it's always a hit. It's so easy to make and it's a great way to get your veggies in. I usually add a little bit of shredded cheddar cheese to the top before baking and it's even better.
