Garlicky Barley Vegetable Chicken Soup for One or Two image

This is from the new Cinch Yourself cookbook. I can all my own tomatoes and I think that gives this dish a little extra great taste. This is a great dish for leftover barley. It will require more time if you have to cook the barley.

I'm not a big fan of barley, but I really enjoyed this soup. The barley was cooked perfectly and it didn't overpower the other ingredients.

This soup was incredibly easy to make, even for a beginner cook like me. I was worried it would be bland, but the garlic and herbs really gave it a lot of flavor.
