GAZPACHO SOUP (FROM THE KITCHEN OF

Yield 10 cups

Number Of Ingredients 15

1/3 cup olive oil
1 large can tomato juice (1 quart, 14 fl. oz.)
4 small cans V-8 juice
4-6 ripe tomatoes, finely chopped
1-2 medium sized cucumbers, finely chopped
1-2 avocados, peeled & finely chopped
2-4 stalks of celery, finely chopped
1/2 onion, finely chopped
1 red bell pepper, finely chopped
1 green bell pepper, finely chopped
1 yellow bell pepper, finely chopped
Salt to taste
Pepper to taste
Garlic either two cloves or to taste.
Tabasco or Red Hot Sauce to taste.

Steps:

  • Combine all ingredients in a large bowl. For best results, chill over night. Makes about 10 cups. "Bad Dad's" Note: Time-saving tip is to chop ingredients using a Sonoma Williams or other hand food chopper that does little squares. Also good served over chilled shrimp. Makes a 'cool' summer for my 'cool' family and friends!
