Steps:
- -Coat the bottom of a large skillet or wok with oil -Add chicken, carrots, onion, and other vegetables. Cook on medium-high heat until chicken is no longer pink and vegetables are tender. -Add ginger and cayenne to taste. -In a separate pot, cook noodles according to package directions, then drain and rinse with HOT water. -In a large serving bowl, combine all ingredients. Toss with peanut sauce and serve hot.
