1 cup flour
1 cup yellow cornmeal
1/4 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup peanut oil or 1 cup canola oil
24 shucked oysters, drained
1/2 cup mayonnaise
1 tablespoon lemon juice
2 teaspoons Worcestershire sauce

Steps:

  • Combine flour, cornmeal, chili powder, salt and pepper. Set aside.
  • Heat oil in cast iron skillet until it reaches 350ยบ or flour bubbles immediately upon being sprinkled in it.
  • Dredge oysters in flour mixture, shake off excess flour and fry in oil until golden brown, about 2 minutes. Transfer to paper towels.
